Apricot and Lentil Courgette Roundels

It’s that in-between time of year as the nights grow longer and thoughts turn towards more substantial meals after a long summer of salads and lighter fare. The last of the seasonal vegetables such as tomatoes and courgettes are perfect for stuffing and baking in the oven, making a bridge between summery salads and the heartier soups and stews of winter that are coming up.

We stuffed some courgettes with a mixture of red lentils, apricots, tomato, onion, bulgur wheat and lemon juice to make a versatile roundel that can be served as part of a main course or eaten on its own as a meze, a fully vegan alternative to the sausage roll!

Apricot and lentil courgette roundel – a vegan alternative to the sausage roll?

The autumn fruit is at its best at the moment, and we’ve added some pear and pomegranate to an autumnal red cabbage, carrot, celery and radish salad to accompany these apricot and lentil courgette roundels to make a great lunch or supper. By adding a jacket potato, you can make it into a more filling main course.

Ingredients (makes enough mixture for 10-12 roundels)

  • Three medium sized courgettes
  • 100 g red lentils
  • 50 g dried apricots (or four fresh apricots if available)
  • One small red onion (approx 75 g)
  • One medium tomato (approx 100 g)
  • 50 g fine bulgur wheat
  • 25 ml olive oil
  • 200 ml vegetable stock
  • Juice of half a lemon
  • One teaspoon cumin seeds
  • One teaspoon red chilli flakes
  • Black pepper to taste

Method

  • Cut the dried apricots into eight pieces and soak in hot water for at least 30 minutes. While the apricots are soaking, heat the oil in a heavy based pan and add the cumin seeds. When they start to sizzle, add the finely chopped onion and fry over a medium heat until they start to soften. Grate the tomato into the fried onion and cook over a low heat for five minutes or so, stirring occasionally.
  • Now add the washed lentils, pour in the stock and stir. Cook over a low heat for 15-20 minutes until most of the water has been absorbed. Add the fine bulgur wheat, mix it in well and leave covered for 15 minutes. Drain the apricots and stir them into the mixture. Add the lemon juice, chilli flakes and black pepper to taste and mix well.
  • While the lentils are cooking, start to prepare the courgettes by slicing off the ends to make them flat. Cut into 3 cm slices. Gouge out the seeds with a small spoon, leaving a little bit of flesh at the bottom of the roundel.
  • Pre-heat the oven to 180 c. When the lentil mix is cool, pack it into the courgette roundels and stand them on a baking tray with the filling topmost. Bake at 180 c for 30 minutes or so – the courgette should still be firm and not too squidgy and the lentil mix should rise slightly and be beginning to brown on top. 
  • Serve alongside a salad of red cabbage, carrot, celery, radish, pear and pomegranate and a jacket potato, drizzling pomegranate sauce over the roundels or allow to cool and serve the roundels as a snack on their own.

Eating Albania

Greetings from Albania, where, among other things, KCC has been on the trail of the byrek, the pie that fuels the Balkans.

From the capital Tirana to the resorts of the south via mountain strongholds such as Berat, we’ve tracked down some fine examples of this savoury pie. But more on this next time, as we haven’t yet had time to recreate this culinary delight at KCC H.Q.

KCC’S Albanian feast

This time round we’ll have a look at some great salads that we’ve encountered on our travels. While in Tirana we visited a restaurant called Mullixhiu which cooks up some great dishes with organic Albanian ingredients.
At this time of year, the full array of fruit and vegetables are coming into season and we had a great salad made from thinly sliced courgettes and plums with a courgette flower sauce and another featuring beetroot, spinach and scattered fragments of dried filo pastry.
We’ve made a salad based on the first one that includes veggies and fruit: courgettes, pears, green peppers and capers served on a bed of lettuce to be precise.

Waiting for a byrek to come along in Ksamil, Albania

With a spinach byrek sourced from one of the many byrektore shops in Ksamil a small resort on the Albanian Riviera, a tomato, pepper and onion salad, and some olives and white cheese, here’s our first Albanian feast.

Ingredients (serves 4)

One medium-sized courgette

One small pear

Two green peppers

One lettuce

Two juicy medium-sized tomatoes

One small red onion

A sprinkling of capers

Method

The key to the courgette salad is to make it just before eating – don’t let it sit around for too long. As for the tomato salad, make this one first and allow the flavours to mingle – the longer, the better.

Roughly chop the tomato and mix in a bowl with thin slices of red onion and green pepper. Set aside and let the flavours mix together while you make the courgette salad.

Shred the lettuce and line a serving bowl with it. Thinly slice the pepper and then the pear. Next slice the courgette as thinly as you can and then sprinkle the capers over the top. Add your preferred salad dressing and that’s it – you’re ready to go!

 

 

Pumpkin, Pear and Pomegranate Potage

Seasoned greetings to all our readers! To end the year on a high, we’ve come up with a thick and hearty pumpkin and pear soup sprinkled with pomegranate to add a colourful touch to your seasonal table.

Roasting pumpkin in the oven is a great way to prepare our favourite winter vegetable. After cubing the pumpkin, it’s just a matter of waiting about an hour or so for it all to cook leaving time to enjoy a few glasses of mulled wine or a snowball or

Ingredients (serves 3-4)

500 g pumpkin cubed

100 g pear

One small onion (around 75 g)

One teaspoon cumin seeds

Half teaspoon ground cinnamon

Pinch of black pepper

50 ml olive oil

250 ml vegetable stock

50 g pomegranate seeds

Method

Chop the pumpkin into 2 cm cubes, quarter and slice the pear into 1 cm cubes and put in a baking dish. Sprinkle the sliced onion, cumin seeds and cinnamon over the pumpkin and pear and then slosh the olive oil over the top. Bake for 40 minutes at 180 c in a pre-heated oven.

While this is baking, boil up some vegetable stock. Add the pumpkin and other ingredients to the stock, blend with a hand blender and serve immediately in a bowl with a smattering of pomegranate seeds over the soup.

 

 

Operation Lentil

It was on this day back in 1944  that the Chechen and Ingush  people of the North Caucusus had one of the darkest moments in their troubled history. Accused by the Soviets of siding with the Nazi forces, the entire population was herded onto cattle trucks and deported by force to Central Asia.

The mission was codenamed ‘Operation Lentil’ – after chechevitsa, the Russian word for lentil, which shares its first two syllables with Chechen. By way of commemoration of this tragedy that befell the Chechen and Ingush communities, who refer to the deportations as Aardakh, the exodus, this time around we’ll be sharing a recipe for the Turkish dish mercimek köftesi – a versatile red lentil patty.

These spicy, lentil patties are easy to prepare and are delicious when rolled up in flatbread, like lavash, with fresh cole slaw and a green salad. We used ajika sauce from Georgia on the other side of the Caucasus mountains, a fiery blend of red chili peppers and tomatoes, to flavour the patties – but if you can’t find this locally, then a mix of tomato paste with chili flakes will do nicely.

Ingredients (Makes around 20-24 lentil patties)

100 g red lentils (one cup)

150 g fine bulgur wheat (1.5 cups)

500 ml water

6-8 teaspoons of ajika sauce (see above)

5 spring (green) onions – chopped

A handful of fresh flat leaf parsley, roughly chopped

One teaspoon of cumin seeds

One teaspoon red chili flakes

Black pepper

25 ml olive oil

Juice of one lemon

Method

Wash the lentils until the water goes clear and then place in a pan with the water. Bring to the boil and simmer over a low heat for 20 minutes or so. The lentils should be going mushy and there should be about 1 cm of water covering the lentils – add more water if necessary.

Add the washed bulgur wheat to the cooked lentils and the ajika sauce and blend well. Allow to stand for 30 minutes or so and then add the olive oil, lemon juice, spring onions, parsley, cumin, red chili flakes and black pepper and mix well.

Allow to stand for a few hours to let the flavours combine and then mould a walnut-sized piece of the mix in the palm of your hand and use your fingers to form a  sausage-shape (see picture above).

Serve rolled in flatbread or stuffed into a pita with a cole slaw made from shredded cabbage, grated carrot, pomegranate seeds, spring onion and capers and  a salad of lettuce, sun dried tomatoes, pear and spring onion.
